Ingredients:

  • 200g mung beans
  • 50g cacao powder
  • 80g oats
  • 4 Medjool dates
  • 1 tbsp coconut sugar
  • 1 tbsp water
  • 2 tbsp melted coconut oil
  • 4 drops DoTerra peppermint oil or 6 leaves
  • 50g vegan choc chips

Instructions:

  1. Preheat oven to 180* F and line an 8″ x 10″ dish with baking paper.
  2. Add all the ingredients, except the choc chips, to the blender and blitz.
  3. Transfer the mixture to a large bowl and mix in the chocolate chips.
  4. Pour into the dish and spread evenly. Add extra chocolate chips to the top.
  5. Bake for 20 minutes, then remove from the oven. Spread the melted chocolate evenly over the top. Leave the brownies for a few minutes before slicing them into 8 pieces or 16 if you’d prefer bitesize treats.
  6. Garnish with strawberries and desiccated coconut.

TIP: If ingredients stick to the corners and base of the blender, add 1/2 cup water and a tsp of nut butter and blitz for 30 seconds. Enjoy your delicious cacao-nut drink with a decadent slice of peppermint brownie.
